Herbed Basmati Rice

Ladies,

For those of you who smelled the rice I was heating up for the boys lunch before scooting off to school, here is the recipe (it's from an old edition of Cooking Light)

Herbed Basmati Rice

2 teaspoons margarine
1/2 teaspoon garlic
1/2 cup basmati (or white) rice
1 cup water
1/4 teaspoon salt
2 teaspoon sliced green onions (don't skip!!)
1/2 teaspoon basil
1/2 teaspoon thyme (or oregano)
2 teaspoon parmesan cheese (shredded best but grated ok)

Melt margarine in saucepan over med heat. Add garlic and saute 1 minute. Add rice; stir well. Add water and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in onions, basil, thyme. Sprinkle w/ cheese.

I often double and triple this recipe. I only have stuff left over if I triple it or more.

YUMMY!!! I tripled the recipe and we ate ever bite!!! All of my kids inhaled it!!!

I just wrote it on my recipe card in a quadrupled amount!
